Method
- 1
Mix the masa harina, salt and warm water into a soft dough and rest, covered, for 15 minutes. Divide into 8 balls.
15 min - 2
Flatten each into a disc about 8 cm across and 5 mm thick. Cook in a dry pan over a medium heat for 1 minute a side to set.
2 min - 3
While still warm, pinch the edges up to make a 1 cm rim. Fry in the oil over a medium heat for 2 minutes a side until crisp at the edges but still tender in the middle. Drain on kitchen paper.
4 min - 4
Warm the refried beans (see the base recipe) and the mole poblano (see the base recipe), each with a splash of water, until steaming hot.
- 5
Spread beans in each sope, add a spoonful of mole, then lettuce, queso fresco and a drizzle of lime crema (see the base recipe).
Tips
- Pinch the rim while the sopes are still warm; cold masa cracks.
- Fry in oil that is hot but not smoking, or they brown without cooking through.
- Keep all the toppings warm and ready so you can serve while the sopes are crisp.
Storing and freezing
Best straight away. The cooked, unfilled sopes keep in the fridge for up to 2 days and crisp up again in a dry pan or a hot oven.
Questions
Are sopes the same as tostadas?
No. Sopes are thick masa discs with a raised rim, partly cooked then fried, and soft inside. Tostadas are thin tortillas fried flat until crunchy.
Can I make them without frying?
Yes. Brush with oil and bake on a tray at {t220} for 12 to 15 minutes, turning once. They will be drier but still good.
