Tips

  • Cook the beef in two batches if your wok is small, so it browns rather than stews.
  • Slice the steak across the grain for tender strips.
  • Keep the heat high and everything moving to stop the noodles sticking.

Storing and freezing

Eat straight away. Keep any leftovers cooled within 1 hour in the fridge for up to 1 day and reheat once until steaming hot all the way through.

Questions

Can I use chicken or prawns instead of beef?

Yes. Chicken strips need 5 to 6 minutes until cooked through, while prawns need only 2 to 3 minutes until pink.

How do I stop the noodles clumping?

Rinse them after soaking, drain well and toss with a teaspoon of oil. Add them last and keep tossing.

Is this gluten free?

Yes, with gluten free tamari and rice noodles. It is also dairy free, egg free and nut free.
