Method
- 1
Break up the cold rice with your hands so there are no clumps. Make sure it was cooled quickly after cooking and kept in the fridge, not left out.
- 2
Heat the vegetable oil in a large wok over a high heat. Add the ready made laksa paste (see the base recipe) and stir fry for 1 minute until fragrant.
1 min - 3
Add the prawns and stir fry for 2 minutes until pink. Push them to the side.
2 min - 4
Pour the eggs into the empty space and scramble for 1 minute until just set.
1 min - 5
Add the rice, peas and tamari. Toss over a high heat for 4 minutes until piping hot all the way through.
4 min - 6
Serve topped with spring onions, lime wedges and a spoonful of your homemade sambal oelek (see the base recipe) on the side.
Tips
- Cold, day old rice fries best because the grains are drier and stay separate.
- Cool leftover rice within an hour, keep it in the fridge and use it within 24 hours. Reheat only once.
- Keep the wok very hot and work in small batches if your pan is small, so the rice fries rather than steams.
Storing and freezing
Best eaten straight away. If you must keep leftovers, cool within 1 hour, chill and eat within 24 hours, reheating once until steaming hot all the way through.
Questions
Can I use freshly cooked rice?
Not ideal. Freshly cooked rice is too wet and goes mushy. Spread it on a tray and chill it until cold, ideally overnight.
Can I make it vegetarian?
Yes. Swap the prawns for 250 g cubed firm tofu and use the vegetarian tamari version of the laksa paste. Add a handful of extra vegetables.
Is it allergy friendly?
It is gluten free, dairy free and nut free, but it contains egg and shellfish.
