Method
- 1
Lower the eggs into a pan of boiling water and cook for 8 minutes. Cool in cold water, then peel.
8 min - 2
Cook the rice following the packet instructions, then cover and keep warm.
12 min - 3
Heat the oil in a wide pan over a medium heat. Fry the ready made laksa paste (see the base recipe) for 3 minutes until it smells rich.
3 min - 4
Add the coconut milk, water and sugar. Simmer gently for 8 minutes until slightly thickened.
8 min - 5
Add the tomatoes and peeled eggs and cook for 5 minutes, spooning the sauce over the eggs.
5 min - 6
Squeeze in the lime juice and serve spooned over the rice.
Tips
- Peel the eggs under a little running water. It helps the shell slip off in one piece.
- Do not boil hard once the coconut milk goes in, or the sauce may split.
- For extra bite, score the peeled eggs lightly so the sauce clings.
Storing and freezing
Keep in the fridge for up to 2 days and reheat until steaming hot all the way through. Not suitable for freezing because of the eggs.
Questions
Is this vegetarian?
Only if you use a vegetarian laksa paste. The standard base contains shrimp paste, so make it with the tamari swap given in the base recipe.
Can I use hard boiled eggs from yesterday?
Yes, if they were cooled quickly and kept in the fridge. Add them to the sauce just long enough to heat through.
Is it dairy free?
Yes. It uses coconut milk and no dairy, so it is also gluten free.
