Method
- 1
Toss the chicken strips with the ready made laksa paste (see the base recipe) and leave for 10 minutes.
10 min - 2
Cook the rice vermicelli following the packet, then drain and rinse under cold water. Leave to drain well.
5 min - 3
Heat the oil in a large frying pan over a medium-high heat. Cook the chicken for 8 to 10 minutes, turning, until golden and cooked through with no pink.
9 min - 4
Put the noodles in a large bowl with the cucumber, carrot, mint and coriander. Add your homemade nuoc cham (see the base recipe) and toss together.
- 5
Divide between four bowls and top with the hot chicken. Eat straight away.
Tips
- Rinse the noodles under cold water to stop them sticking together.
- Cut the chicken in even strips so it cooks through quickly and stays juicy.
- Pack the dressing separately for lunchboxes so the salad does not go soggy.
Storing and freezing
Keep in the fridge for up to 1 day. Keep the chicken and dressing separate from the salad if packing for lunch, and keep it cold.
