Method
- 1
Heat the oven to 220°C (200°C fan). Pat the wings completely dry with kitchen paper.
- 2
Toss the wings in the vegetable oil and gluten free baking powder, then spread them on a lined tray with space between each. Bake for 35 minutes, turning once, until golden and crisp.
35 min - 3
Mix the ready made laksa paste (see the base recipe) with the coconut milk and half the lime juice in a large bowl.
- 4
Tip the hot wings into the paste and toss until coated. Return them to the oven for 10 minutes to sticky up. Check the wings are cooked through, with clear juices and no pink.
10 min - 5
Pile onto a plate and scatter with coriander. Serve with lime wedges and your pickled red onions (see the base recipe) on the side to cut the richness.
Tips
- Drying the wings well and using baking powder gives crisp skin without frying.
- Space the wings out on the tray. Crowded wings steam instead of crisping.
- Wash your hands and tools after touching raw chicken, and make sure the wings are cooked through with no pink.
Storing and freezing
Cool within 1 hour and keep in the fridge for up to 2 days. Reheat in a hot oven until steaming hot all the way through. Freezing is not recommended once glazed.
Questions
Can I air fry them?
Yes. Cook at 200C for 18 to 22 minutes, turning once, then toss in the paste and air fry for 3 more minutes.
Why do wings need baking powder?
It dries and roughens the skin so it crisps. Use a gluten free baking powder and do not mistake it for bicarbonate of soda.
Are these gluten free?
Yes, as long as you use gluten free baking powder. They are also dairy free, egg free and nut free.
