Method

  1. 1

Heat the oven to 240°C (220°C fan) with a baking tray or pizza stone inside to get properly hot. Take your ready made pizza dough (see the base recipe) out of the fridge to come to room temperature.

  2. 2

Fry the bacon in a dry pan for 5 minutes until just crisp. Drain on kitchen paper.

    5 min
  3. 3

Use your ready made kimchi (see the base recipe), drained well and chopped.

  4. 4

Divide the dough in 2. Roll or stretch each piece into a 28 cm round on a surface dusted with semolina.

  5. 5

Spread 2 tbsp passata on each round, leaving a 2 cm border. Add the mozzarella, bacon and kimchi.

  6. 6

Slide onto the hot tray and bake for 8 to 10 minutes until the crust is blistered and the cheese is bubbling.

    9 min
  7. 7

Scatter over the spring onions and sesame seeds. Slice and serve.

Tips

  • Drain the kimchi well so the pizza does not go soggy in the middle.
  • A very hot oven and preheated tray give a crisp base.
  • Add the kimchi over the cheese, not under it, so it chars slightly at the edges.

Storing and freezing

Keep leftover slices in the fridge for up to 2 days and reheat in a hot oven for 8 minutes until steaming hot. Freeze cooked slices for up to 1 month.

Questions

Is kimchi good on pizza?

Yes. Its sour heat cuts through the cheese and bacon in the same way pineapple or chilli does. Cooking it softens the sharpness.

Can I make it without bacon?

Yes, but it will still contain fish sauce through the kimchi. Replace the bacon with sliced mushrooms or ham.

Can I use ready made pizza bases?

Yes. Bake according to the packet, adding the toppings and reducing the time slightly.

Can I make it gluten free?

The pizza dough base contains wheat, so no. Use a gluten free pizza base and check the kimchi label.
