Method

  1. 1

Take your ready made pizza dough (see the base recipe) out of the fridge 30 minutes before using. Heat the oven to 240°C (220°C fan) with two baking trays inside.

  2. 2

Toss the chicken with the oil, garam masala, cumin and a pinch of salt. Fry in a hot pan for 6 to 7 minutes until cooked through and browned.

    6 min 40 s
  3. 3

Stir 60 ml of your ready made makhani base (see the base recipe) into the chicken and cook for 1 minute so it clings.

  4. 4

Divide the dough into 2 and stretch each piece into a thin round on baking paper.

  5. 5

Spread each base with the remaining makhani sauce, leaving a rim. Scatter over the chicken, mozzarella and red onion.

  6. 6

Slide the pizzas, still on their paper, onto the hot trays. Bake for 10 to 12 minutes until the crust is puffed and the cheese is spotted brown.

    11 min
  7. 7

Drizzle with yoghurt and scatter over the coriander before slicing.

Tips

  • Keep the sauce layer thin. Too much makhani makes the base soggy.
  • Cook the chicken fully first so the pizza only needs to bake the dough and cheese.
  • A very hot oven and preheated trays give the best crust.

Storing and freezing

Best eaten on the day. Leftover slices keep 2 days in the fridge and reheat in a hot oven for 8 minutes until steaming hot in the middle.
