Method
- 1
Mix the paneer, pepper and half the onion with your ready made tikka marinade (see the base recipe). Cover and chill for at least 1 hour or up to 6 hours.
- 2
Heat the oven to 250°C (230°C fan) with a heavy baking tray inside for 30 minutes.
- 3
Heat the oil in a large frying pan over a high heat and cook the marinated paneer and vegetables for 6 to 8 minutes, turning, until charred in places.
7 min - 4
Divide your ready made pizza dough (see the base recipe) in half and stretch each piece to about 30 cm on baking paper dusted with semolina. Spread with the passata, leaving a 2 cm rim.
- 5
Scatter over the mozzarella, then the paneer, vegetables and remaining raw red onion.
- 6
Slide onto the hot tray and bake for 8 to 10 minutes until blistered and golden.
10 min - 7
Stir the yoghurt and mint together and drizzle over the pizza.
Tips
- Cook the marinated paneer first. It chars in a hot pan and does not need long in the oven.
- Pat the paneer dry before marinating so the spices cling to it.
- Serve with a squeeze of lime or sliced green chilli.
Storing and freezing
Best the same day. Cool leftovers within 1 to 2 hours, keep covered in the fridge for up to 2 days and reheat until steaming hot all the way through.
Questions
Can I use tofu instead of paneer?
Yes. Use 250 g of extra firm tofu, pressed for 20 minutes and cut into cubes. The marinade contains yoghurt, so the dish is vegetarian rather than vegan unless you use a plant-based marinade.
Can I use chicken?
Yes. Use 350 g of chicken thigh pieces, marinate for 2 hours or more and cook fully through in the pan until there is no pink inside before topping the pizza.
Can I use naan instead of pizza dough?
Yes. Top 4 plain naan breads and bake at 220C for 8 minutes. It is a quick midweek version.
