  2. 2

Spread one side of each bread slice with hummus and lay the halloumi, peppers and rocket on 2 of them. Top with the other 2 slices, hummus side down.

  3. 3

Butter the outside of the sandwiches.

  4. 4

Wipe the pan, set over a medium heat, and cook the sandwiches for 3 to 4 minutes per side, pressing down, until deep golden and crisp.

  5. 5

Cut in half and serve while hot.

Tips

  • Use your ready made hummus (see the base recipe) straight from the fridge. It spreads better when chilled.
  • Pat the halloumi dry so it browns instead of steaming.
  • Use gluten free bread and dairy free spread to adapt for allergies. Halloumi is dairy, so swap for roast aubergine.

Storing and freezing

Best eaten fresh. Wrap leftovers and refrigerate for up to 1 day, then reheat in a hot pan until steaming hot all the way through.

Questions

Can I use a toastie maker?

Yes. Cook for 4 to 5 minutes until golden. Do not overfill, as the halloumi can ooze out.

Which bread is best?

Sturdy sourdough or ciabatta holds the fillings and crisps well. Thin sliced white bread works but gets soft more easily.
