Method
- 1
Heat the oven to 200°C (180°C fan). Mix the za'atar, 2 tablespoons of the olive oil, the lemon juice, garlic and 1 teaspoon of salt in a bowl. Rub all over the chicken thighs.
- 2
Put the chicken skin side up on a roasting tray with the onion wedges and lemon wedges.
- 3
Roast for 40 to 45 minutes, until the skin is crisp and golden and the juices run clear when you pierce the thickest part.
43 min - 4
Mix the tomatoes with the remaining olive oil, parsley and a pinch of salt.
- 5
Spread your ready made hummus (see the base recipe) over a warm platter and make a dip in the middle with the back of a spoon.
- 6
Lay the chicken and roasted onions on the hummus, spoon over the tomato salad and the roasting juices, and serve with the roast lemon wedges.
Tips
- Dry the chicken skin with kitchen paper before rubbing. It crisps better.
- Check the za'atar label for added wheat or anything unsuitable. Most are just thyme, sesame, sumac and salt.
- Boneless thighs cook in about 25 minutes. Check they are cooked through with no pink inside.
Storing and freezing
Cool within 1 hour and keep in the fridge for up to 2 days. Reheat chicken until steaming hot all the way through. Serve the hummus cold or at room temperature.
Questions
Can I use chicken breast?
Yes, but it dries easily. Use bone-in breasts and roast for 30 to 35 minutes until the juices run clear.
Can I make za'atar myself?
Yes. Mix 2 tablespoons dried thyme, 1 tablespoon sumac and 1 tablespoon toasted sesame seeds with a pinch of salt.
