Method
- 1
Heat the oven to 220°C (200°C fan). Toss the cauliflower florets with the olive oil and salt on a large baking tray. Roast for 25 minutes until tender with dark golden edges.
25 min - 2
Meanwhile, cook the quinoa in 480 ml of boiling water for 12 to 15 minutes until the water is absorbed. Cover and leave to steam for 5 minutes, then fluff with a fork.
14 min - 3
Toast the pumpkin seeds in a dry frying pan for 2 minutes until they pop and smell nutty.
- 4
Take the cauliflower from the oven and toss with about two thirds of your ready made chermoula (see the base recipe) while still hot, so it soaks in.
- 5
Spread your ready made hummus (see the base recipe) over the bases of four plates or bowls. Top with the quinoa and the chermoula cauliflower.
- 6
Spoon over the remaining chermoula, scatter with the toasted seeds and serve with lemon wedges.
Tips
- Toss the cauliflower with the chermoula while it is hot, since it absorbs the flavour best.
- Do not crowd the tray. Use two if needed, so the florets brown rather than steam.
- Roast a whole head of cauliflower for 50 to 60 minutes at {t200} if you want a showstopper, then spoon the chermoula over it.
Storing and freezing
Keep the cauliflower, quinoa and hummus in the fridge, covered, for up to 3 days. Reheat the cauliflower and quinoa until steaming hot. The quinoa freezes well but the hummus is best fresh.
Questions
Can I use broccoli or romanesco?
Yes. Broccoli roasts in about 18 to 20 minutes. Romanesco works like cauliflower. Either takes the chermoula well.
Is this vegan and gluten free?
Yes, as long as your chermoula and hummus are made without animal ingredients or gluten. The base recipes on this site are both.
Can I serve it cold?
Yes. It makes a good packed lunch. Let the roast cauliflower cool and serve it at room temperature over the hummus and quinoa.
