Method

  1. 1

Heat the oven to 200°C (180°C fan). Toss the squash and onion with 1 tablespoon of the oil and a pinch of salt on a tray. Roast for 25 minutes, adding the sage leaves for the last 5 minutes, until the squash is tender and golden.

Arrange the roasted squash, onion and most of the sage in the case and dot with the goat's cheese.

  5. 5

Tips

  • Roast the squash until it is caramelised at the edges for the best sweetness.
  • Check the label and choose a goat's cheese made with vegetarian rennet if serving vegetarians.
  • Add a handful of toasted pumpkin seeds on top for crunch.

Storing and freezing

Cool within 2 hours and keep in the fridge for up to 3 days. Serve cold or reheat slices at 160C (fan 140C) for 12 minutes until hot through. Not suitable for freezing.

Questions

Can I use pumpkin?

Yes. Use the same weight of peeled pumpkin or Crown Prince squash, roasted until tender.

Can I use a different cheese?

Yes. Feta, blue cheese or ricotta all work. Blue cheese adds a stronger flavour.

Can I make it ahead?

Yes. Roast the squash and blind bake the case a day ahead and keep in the fridge, then assemble and bake on the day.
