Method
- 1
Toss the aubergine chips with the salt in a colander and leave for 20 minutes. Pat very dry with kitchen paper.
20 min - 2
Heat the oven to 220°C (200°C fan) and put two large baking trays in to heat. Whisk the cornflour with the water in a shallow bowl. Mix the polenta, paprika and oregano on a plate.
- 3
Dip each chip into the cornflour mix, then press into the polenta so it is well coated.
- 4
Take the trays out, add 1 tbsp oil to each and tip on the chips in a single layer. Drizzle with the remaining oil.
- 5
Bake for 25 to 30 minutes, turning once, until deep golden and crisp with a soft middle.
27 min 30 s - 6
Use your ready made tzatziki (see the base recipe). Serve the chips hot with the tzatziki and lemon wedges.
Tips
- Salting draws out bitter moisture and stops the aubergine soaking up too much oil.
- Hot trays are the secret. The coating sizzles and sets on contact instead of sticking.
- Leave space between chips. Crowded chips steam rather than crisp.
Storing and freezing
Best eaten straight from the oven. Leftovers keep in the fridge for 2 days and can be re-crisped in a hot oven for 10 minutes. They do not freeze well.
Questions
Are aubergine chips gluten free?
Yes. The coating is cornflour and polenta, and both are naturally gluten free. Check the polenta label if you are coeliac to be sure it was not processed with wheat.
Can I air fry them?
Yes. Spray with a little oil and air fry at 200C for 12 to 15 minutes, shaking halfway, until crisp.
Can I make them vegan?
The chips are already vegan. Serve with a dairy free tzatziki made from thick coconut or soya yoghurt, or with hummus.
