Method

  1. 1

Mix 2 tbsp olive oil with the garlic, lemon zest, half the lemon juice and the oregano. Toss the prawns in it, cover and chill for 20 minutes. Soak 8 wooden skewers in water.

  2. 2

Boil the orzo in well salted water for about 9 minutes, or to packet instructions, until just tender. Drain and rinse under cold water.

  3. 3

Dice the cucumber. Toss the orzo with the tomatoes, cucumber, olives, mint, the remaining oil and lemon juice. Season with black pepper.

  4. 4

Thread the prawns onto the skewers. Heat a griddle pan or barbecue until very hot.

  5. 5

Cook the skewers for 2 to 3 minutes each side, until pink all the way through and lightly charred.

Use your ready made tzatziki (see the base recipe). Serve the skewers on the orzo salad with a generous spoonful of tzatziki.

Tips

  • Do not marinate prawns for more than 30 minutes in lemon juice, or the texture turns mealy.
  • Prawns cook fast. Take them off as soon as they are pink and curled into a loose C shape.
  • Rinse the orzo in cold water so the salad does not clump.

Storing and freezing

Eat the same day if you can. Leftover cooked prawns keep in the fridge for up to 1 day. The orzo salad keeps for 2 days. Do not reheat the prawns more than once.

Questions

Can I make this gluten free?

Yes. Replace the orzo with cooked rice or gluten free orzo or pasta shapes. The prawns, marinade and tzatziki are all naturally gluten free.

Can I use frozen prawns?

Yes. Thaw them fully in the fridge overnight, pat them very dry and then marinate, so they sear instead of steaming.

Does this contain any allergens?

Yes. Prawns are shellfish, the tzatziki contains milk and the orzo contains wheat. It is egg free and nut free.
