Method
- 1
Heat the oven to 200°C (180°C fan). Mix the olive oil, garlic, lemon juice, turmeric, smoked paprika, salt and your ready made garam masala (see the base recipe) in a large bowl.
- 2
Add the chicken thighs and rub the marinade all over, getting under the skin. Leave for 15 minutes while the oven heats.
15 min - 3
Spread the potatoes and onion wedges in a large roasting tin. Place the chicken on top, skin side up, in a single layer.
- 4
Roast for 45 to 50 minutes, turning the potatoes once, until the chicken skin is crisp and the juices run clear when you pierce the thickest part.
48 min - 5
Rest for 5 minutes. Serve with spoonfuls of your ready made tzatziki (see the base recipe) on the side.
Tips
- Pat the chicken skin dry before adding the marinade. Dry skin crisps better.
- Check the chicken is cooked through at the bone. The juices must run clear with no pink, and the thickest part must be steaming hot.
- Squeeze a little lemon over the tray just before serving to lift the spices.
Storing and freezing
Cool within 1 hour and keep covered in the fridge for up to 3 days. Reheat until steaming hot all the way through. The tzatziki keeps separately for 2 days.
Questions
Can I use chicken drumsticks or breasts?
Yes. Drumsticks take the same time. Breasts dry out, so use skin on bone in breasts and check them after 30 minutes.
Can I make it dairy free?
Yes. Serve the chicken with a squeeze of lemon and a dairy free yoghurt mixed with chopped cucumber and mint in place of the tzatziki.
Is it gluten free?
Yes, as written. The chicken, vegetables and spices contain no gluten. Check your smoked paprika label if you are coeliac.
