Method

  1. 1

Mix the chicken with the lemon juice, garlic, oregano, 2 tbsp olive oil and the salt. Cover and chill for at least 1 hour or up to 6 hours. Throw away the leftover marinade, as it held raw chicken.

  2. 2

Divide your ready made pizza dough (see the base recipe) into 8 pieces. Roll each into a 3 mm thick round.

  3. 3

Heat a dry frying pan or griddle over a high heat. Cook each flatbread for 1 to 2 minutes a side, until puffed with brown spots. Stack in a clean tea towel to stay soft.

    2 min
  4. 4

Thread the chicken onto skewers, if you like. Heat the remaining oil in a large pan or griddle and cook for 10 to 12 minutes, turning, until charred and cooked through with no pink and juices running clear.

    11 min
  5. 5

Rest the chicken for 3 minutes.

  6. 6

Spread each flatbread with your ready made tzatziki (see the base recipe). Fill with chicken, tomato and red onion, squeeze over lemon and fold.

Tips

  • Roll the flatbreads thin. They puff up in the hot pan and make a pocket.
  • Use thigh fillets. They stay juicy, where chicken breast dries out quickly on high heat.
  • Cook the flatbreads first and keep them wrapped. They go stiff if left uncovered.

Storing and freezing

Keep cooked chicken and tzatziki separately in the fridge for up to 3 days, and flatbreads for 2 days. Reheat chicken until steaming hot all the way through.

Questions

Is this a real Greek dish?

Yes, in spirit. Souvlaki are grilled meat skewers, often wrapped in a pitta with tzatziki, tomato and onion as street food. Here the pitta is made from pizza dough.

Can I use pork or lamb?

Yes. Pork shoulder is the most common in Greece. Use 600 g, cut into small pieces, and grill until cooked through with no pink.

Can I grill the flatbreads on a barbecue?

Yes. Cook them directly on a hot grill for 1 to 2 minutes a side. They puff and char beautifully.
