Method
- 1
Heat the oven to 200°C (180°C fan). Toss the potatoes with 1 tbsp olive oil, half the lemon juice, the zest and a pinch of black pepper. Roast for 35 minutes, turning once, until golden.
35 min - 2
In a bowl, mix the mince, grated onion, garlic, oregano and parsley with your hands until just combined. Do not overwork it.
- 3
Divide into 4 balls and flatten each. Press a slab of feta into the middle of each, then fold the meat over and shape into a thick oval patty so the cheese is sealed in.
- 4
Heat the remaining oil in a large frying pan over a medium high heat. Cook the patties for 6 to 7 minutes each side until browned and cooked through, with no pink meat inside.
13 min - 5
Rest the patties for 3 minutes. Use your ready made tzatziki (see the base recipe).
- 6
Serve the bifteki with the lemon potatoes, sliced tomatoes, the rest of the lemon juice over the top and a big spoonful of tzatziki.
Tips
- Squeeze the grated onion in a clean cloth, or the patties turn wet and are hard to shape.
- Seal the feta right in the centre with no gaps, or it leaks out into the pan.
- Chill the shaped patties for 15 minutes before cooking if your kitchen is warm, as they hold together better.
Storing and freezing
Keep cooked patties in the fridge for up to 3 days and reheat until steaming hot all the way through. Uncooked shaped patties freeze well for up to 2 months, layered with baking paper.
Questions
Are bifteki gluten free?
Yes, as written. There are no breadcrumbs, so the patties are held by the meat and onion alone. Always check your mince and feta labels if you are coeliac.
Can I use lamb or pork mince?
Yes. Lamb gives a stronger flavour, and pork mince with a little extra oregano is also common in Greek homes. Cook until there is no pink meat.
Can I cook them on a barbecue?
Yes. Grill over medium coals for 6 to 7 minutes each side. Oil the grate well, as the feta can stick.
