Method
- 1
Mix the olive oil, lemon juice, garlic, oregano and salt in a bowl. Add the chicken, stir to coat, cover and marinate in the fridge for at least 1 hour, or up to 8 hours.
- 2
Soak 8 wooden skewers in water for 30 minutes, then thread the chicken on to them.
- 3
Heat a griddle pan or grill to high. Cook the skewers for 10 to 12 minutes, turning every 3 minutes, until charred in places and cooked through with no pink and clear juices.
11 min - 4
Warm the pittas in a dry pan or the oven for 1 minute.
- 5
Spread each pitta with a spoonful of your ready made hummus (see the base recipe) and tzatziki (see the base recipe).
- 6
Slide the chicken off the skewers on to the pittas, add tomato, red onion and cucumber, and top with more tzatziki. Fold and eat at once.
Tips
- Marinate the chicken for at least an hour, but no more than 8, as the lemon will start to make it stringy.
- Pork shoulder is the classic souvlaki meat. Cut it the same size and cook it until there is no pink.
- Add a handful of chips inside the pitta for the street food version.
Storing and freezing
Keep cooked chicken in the fridge for up to 2 days and reheat until steaming hot. Assemble fresh pittas and keep tzatziki chilled until serving.
