Method

  1. 1

Heat the grill to high. Grill the bacon for 4 to 5 minutes on each side, until golden and crisp. Drain on kitchen paper.

    9 min
  2. 2

Toast the bread until golden on both sides and let it cool for 1 minute so it does not wilt the lettuce.

  3. 3

Spread all the toast generously with your ready made homemade mayonnaise (see the base recipe).

  4. 4

Build each sandwich: toast, chicken, then toast, bacon, tomato and lettuce, then a final slice of toast, mayonnaise side down.

  5. 5

Season the tomato with salt and the chicken with pepper as you layer.

  6. 6

Push a cocktail stick into each quarter, cut diagonally into four triangles and serve with crisps or salad.

Tips

  • Cool the toast slightly. Hot toast wilts the lettuce and melts the mayonnaise.
  • Salt the tomato slices separately on kitchen paper for 5 minutes to stop the bread going soggy.
  • Use cocktail sticks to hold the stack together while cutting.

Storing and freezing

Best eaten fresh. Wrapped in the fridge, they keep 1 day, but the toast will soften.

Questions

Why is it called a club sandwich?

The origin is disputed. It is a classic American triple decker, often credited to New York hotels and clubs in the late nineteenth century.

Can I use leftover roast chicken?

Yes, sliced roast chicken works perfectly. Remove the skin, or crisp it under the grill for an extra topping.

Can I make it gluten free?

Yes. Use gluten free sliced bread, toasted well. Check the bacon and mayonnaise labels.
