Method

  1. 1

Heat the oven to 200°C (180°C fan). Prick the potatoes with a fork, rub with the olive oil and a pinch of salt, and put them directly on the oven shelf.

  2. 2

Bake for 1 hour to 1 hour 15 minutes, until the skins are crisp and the middle is soft when squeezed.

    70 min
  3. 3

Meanwhile, boil the eggs in a pan for 9 minutes, then cool them in cold water, peel and roughly chop.

    9 min
  4. 4

Mix the eggs with your ready made homemade mayonnaise (see the base recipe), the mustard and half the spring onions. Season well with salt and pepper.

  5. 5

Split each hot potato open and fluff the inside with a fork.

  6. 6

Spoon the egg mayonnaise into each potato and top with the remaining spring onions and the cress. Serve straight away.

Tips

  • Bake the potatoes straight on the oven shelf for the crispest skin. Microwaving first saves 15 minutes, then finish in the oven for 15 minutes.
  • Cool the eggs quickly in cold water so they peel easily and the yolks stay yellow.
  • Add a little curry powder to the egg mayonnaise for a coronation style filling.

Storing and freezing

Eat the potatoes hot straight away. The egg mayonnaise keeps 2 days in the fridge in a covered pot.

Questions

How do I make the skin extra crisp?

Rub the skins with oil and salt and bake on the shelf, not in a tray. Do not wrap in foil, which steams the skin and makes it soft.

Can I make the filling ahead?

Yes. Make it up to 24 hours ahead and keep it chilled in a covered pot. Stir before using and add the cress at the last minute.

Is this gluten free?

Yes, as long as your mustard is gluten free. It is also dairy free and nut free, and vegetarian.
