Method

  1. 1

In a bowl, mix the chicken mince with 20 g of your ready made sambal oelek (see the base recipe), the spring onions and salt. Mix with your hands for 30 seconds until just combined. Shape into four patties about 2 cm thick and chill for 15 minutes.

  2. 2

For the sambal mayo, stir the remaining 20 g sambal oelek into your ready made mayonnaise (see the base recipe) with half the lime juice.

  3. 3

Toss the cabbage and carrot with the remaining lime juice and a pinch of salt for the slaw.

  4. 4

Heat the oil in a frying pan over a medium high heat. Fry the patties for 5 to 6 minutes per side until deeply golden and cooked through, with no pink and clear juices.

  5. 5

Toast the buns cut side down in the same pan for 1 minute. Spread both halves with sambal mayo.

  6. 6

Assemble with a patty and the slaw and serve straight away.

Tips

  • Chicken mince is lean, so do not overwork it. Overmixed patties turn tough and dry.
  • Pressing a small dimple in the centre of each patty stops it puffing up while cooking.
  • Cook until there is no pink and the juices run clear. Chicken burgers must never be served pink.

Storing and freezing

Cooked patties keep 2 days in the fridge once cooled within 2 hours. Raw patties freeze for up to 3 months with baking paper between them. Reheat until steaming hot all the way through. Use the sambal mayo within 3 days.

Questions

Can I make them gluten free?

Yes. Use gluten free burger buns, or serve the patties in lettuce leaves. The patties themselves contain no flour or breadcrumbs.

Can I use turkey mince?

Yes. Turkey mince works the same way. A spoonful of oil mixed in keeps lean mince juicier.

Can I make the patties ahead?

Yes. Shape them up to a day ahead, keep covered in the fridge, and cook from cold, adding a minute to each side.
