  3. 3

Heat the oil in a frying pan and fry the plantain slices for 2 to 3 minutes a side, until deep golden and caramelised at the edges. Drain on kitchen paper.

    6 min
  4. 4

Divide the rice, beans, carnitas and plantain between four plates.

  5. 5

Add avocado slices and a lime wedge to each.

Tips

  • Use plantain with a mostly black skin. It is sweeter and caramelises better.
  • Fry the plantain in a single layer so each slice browns and does not steam.
  • Serve with a chilli salsa on the table so people can add heat.

Storing and freezing

Keep components in the fridge for up to 3 days. Reheat until steaming hot all the way through, and reheat rice only once.

Questions

What is comida corrida?

Comida corrida is a fixed price set lunch served in Mexican fondas, usually with soup, a main with rice and beans, and a drink. This plate is in that spirit.

Can I use ordinary bananas?

No, plantain is starchy and holds its shape when fried. Ordinary banana turns mushy.

Is it gluten free?

Yes, as written. Check the rice and bean recipes for any stock cubes.
