Method
- 1
Put the chicken in a bowl with your ready made pollo asado marinade (see the base recipe). Turn to coat, cover and marinate in the fridge for at least 2 hours or overnight.
120 min - 2
Heat a griddle or barbecue until hot, or the oven to 220°C (200°C fan). Lift the chicken from the marinade, shaking off the excess. Discard leftover marinade, as it touched raw chicken.
- 3
Brush the onion wedges with oil. Grill the chicken for 6 to 7 minutes per side until charred and the juices run clear with no pink inside (75 degrees C at the thickest part).
13 min - 4
Rest for 5 minutes, then slice. Warm your ready made cilantro lime rice (see the base recipe) in a pan with a splash of water until steaming hot.
- 5
Serve the chicken over the rice with the onions, lime wedges and plenty of your creamy jalapeno cilantro sauce (see the base recipe).
Tips
- Do not marinate chicken in citrus for more than 24 hours or the texture goes mealy.
- Use a thermometer: chicken thighs are safe at 75 degrees C but stay juicier cooked a little past it.
- Thin the sauce with a splash of water if it is too thick to drizzle.
Storing and freezing
Keeps 3 days in the fridge, with the sauce separate. Freeze the chicken for up to 2 months. Reheat rice only once, until steaming hot all the way through.
