Method
- 1
Heat the oven to 220°C (200°C fan). Toss the sweet potato with the oil and taco seasoning mix on a large baking tray and spread into one layer.
- 2
Roast for 25 minutes, turning once, until soft in the middle and browned at the edges.
25 min - 3
Meanwhile, soak the sliced red onion in the lime juice with a pinch of salt for 15 minutes, until bright pink.
15 min - 4
Warm your ready made Mexican black beans (see the base recipe) in a small pan for 5 minutes with a splash of their liquid, until steaming hot all the way through.
5 min - 5
Warm the corn tortillas one at a time in a dry frying pan for 30 seconds each side. Fill with black beans and sweet potato, then top with the pink onion, feta and coriander and serve.
Tips
- Cut the sweet potato into even cubes so it all cooks at the same rate and caramelises evenly.
- Leave the skin on if you like. It crisps up and saves peeling time.
- Mash a little sweet potato into the beans for a thicker, creamier filling.
- Leave off the feta and use a spoonful of avocado for a dairy free, vegan version.
Storing and freezing
Keeps in the fridge for up to 3 days. Cool within 1 to 2 hours, store the filling separately from the tortillas and reheat until steaming hot all the way through. The roasted filling freezes for up to 2 months.
Questions
Can I make these tacos vegan?
Yes. Leave out the feta and use sliced avocado or a spoonful of vegan yoghurt with lime. The sweet potato, black beans and taco seasoning are already plant based.
Which sweet potato works best?
The orange fleshed type is soft and sweet and roasts well. Keep the cubes at 1.5 cm for even cooking and brown them well for the best flavour.
Can I use tinned black beans?
Yes. Drain and warm 400 g of tinned beans with a pinch of cumin, a crushed garlic clove and a splash of water. It will not have the same depth as slow cooked beans, but it is a good shortcut.
