Method
- 1
Warm your ready made frijoles negros (see the base recipe) in a pan and mash roughly with a splash of broth.
- 2
Lay out 4 flour tortillas and spread each with beans, leaving a 1 cm border. Scatter over the cheese and cover each with a second tortilla, pressing down.
- 3
Heat a little oil in a large frying pan over a medium heat. Cook each sincronizada for 3 minutes per side, pressing with a spatula, until crisp and golden and the cheese has melted.
6 min - 4
Rest for 1 minute, then cut into wedges.
- 5
Serve with your ready made pico de gallo (see the base recipe) and sliced avocado.
Tips
- Leave a border of cheese free beans so the edges seal as the cheese melts.
- Press while cooking for an even crisp, and keep the heat medium so the cheese melts before the tortilla burns.
- Sincronizadas are usually made with ham too. Add a slice per tortilla for a meaty version.
Storing and freezing
Best eaten fresh. Cool and keep in the fridge for up to 2 days, then reheat in a dry pan until steaming hot all the way through.
Questions
What is the difference from a quesadilla?
A quesadilla is a single tortilla folded over cheese. A sincronizada is two tortillas stacked like a sandwich with the filling between them.
Can I use corn tortillas?
You can, but flour tortillas are traditional for sincronizadas because they seal and crisp well.
Can I freeze them?
Yes, once cooked and cooled. Wrap well and freeze for up to 2 months. Reheat in a hot pan until steaming hot all the way through.
