Method
- 1
Heat the oven to 200°C (180°C fan). Toss the sweet potato with the oil, smoked paprika and a pinch of salt on a baking tray. Roast for 30 minutes, turning once, until soft and browned at the edges.
30 min - 2
Warm your ready made black beans (see the base recipe) in a small pan with a splash of water for 5 minutes until steaming hot.
5 min - 3
Reheat your ready made cilantro lime rice (see the base recipe) in a covered pan with a splash of water, or in the microwave, until steaming hot all the way through.
- 4
Warm the sweetcorn in a small pan for 2 minutes, with a pinch of salt.
2 min - 5
Divide the rice between four bowls. Top with the beans, sweet potato, corn, tomatoes and avocado.
- 6
Warm your ready made BBQ sauce (see the base recipe) and drizzle it over each bowl. Serve with a lime wedge.
Tips
- Roast the sweet potato in a single layer with space between the cubes so it browns instead of steaming.
- For a spicier bowl add a spoon of chipotle paste to the BBQ sauce before drizzling.
- Pack everything separately for lunchboxes and add the avocado and sauce just before eating.
Storing and freezing
Keeps 2 days in the fridge in separate containers. Cool the rice within 1 hour of cooking, reheat only once, and make sure it is steaming hot all the way through.
Questions
Can I use tinned black beans?
Yes. Use 400 g drained and rinsed tinned beans, warmed with a pinch of cumin and a splash of water. Your own beans have more flavour, but tinned are quicker.
Is this bowl vegan and gluten free?
Yes. All three bases are vegan and gluten free, and the vegetables are plain. Check the label on the tinned sweetcorn for added ingredients.
Can I add a protein?
Yes. Grilled chicken, crispy tofu or pulled pork all go well. Marinate raw chicken in the BBQ sauce, then cook it well before adding to the bowl.
