Coat the sliced pork in your ready made al pastor marinade (see the base recipe). Cover and chill for at least 4 hours or overnight.

  2. 2

Heat the oil in a large frying pan over a high heat and cook the pork in two batches for 3 to 4 minutes per side until charred and cooked through. Chop it small and stir in the pineapple.

  3. 3

Warm the refried beans in a small pan until steaming hot all the way through, loosening with a splash of water if they feel stiff. Heat the rice in the microwave until piping hot.

  5. 5

Spread a quarter of the beans down the middle of each tortilla, then add the rice, pork, cheese, onion and coriander. Do not overfill.

  6. 6

Fold in the sides, then roll up tightly. Toast the burritos seam side down in a dry pan for 2 minutes per side until golden. Cut in half and serve.

Tips

  • Warm the tortillas first. Cold tortillas crack when rolled.
  • Do not overfill. About 5 to 6 heaped tablespoons of filling per burrito is the limit before they burst.
  • Wrap burritos tightly in foil to freeze. Reheat from frozen in a hot oven or microwave.
  • Cool the rice quickly and never reheat it more than once.

Storing and freezing

Wrap and keep for up to 3 days in the fridge, cooled within 1 to 2 hours. Freeze in foil for up to 2 months. Reheat until steaming hot all the way through.

Questions

Can I make burritos ahead and freeze them?

Yes. Cool the filling completely, roll the burritos, wrap in foil and freeze for up to 2 months. Reheat from frozen in a hot oven for about 30 minutes until steaming hot all the way through.

Is this burrito dairy free?

Not as written, because of the cheddar. Leave it out or use a dairy free cheese. Flour tortillas do contain gluten, so it is not gluten free either.

Can I use chicken?

Yes. Slice skinless chicken thighs thinly and cook for 3 to 4 minutes per side until cooked through and golden.
