Method

  1. 1

Blend your ready made black beans (see the base recipe) with the water and salt until smooth. Add a splash more water if it is thicker than single cream.

  2. 2

Heat the oil in a wide frying pan, pour in the bean sauce and simmer for 5 minutes, stirring, until it coats the back of a spoon. Season to taste.

  3. 3

Warm your ready made queso (see the base recipe) gently in a small pan over a low heat, stirring, until steaming. Add a splash of milk if it has thickened. Do not let it boil.

  4. 4

Warm the corn tortillas (see the base recipe) in a dry frying pan or microwave until soft.

  5. 5

Dip each tortilla in the hot bean sauce for a few seconds, fold into quarters and arrange three on each warm plate.

  6. 6

Spoon over a little more sauce, drizzle with queso and top with avocado and red onion. Serve at once.

Tips

  • Keep the sauce hot while dipping so the tortillas soften and absorb it.
  • Add a pinch of chipotle powder or an epazote sprig to the sauce for authentic flavour.
  • Dip tortillas one at a time and plate them quickly so they do not tear.

Storing and freezing

Best eaten at once. Keep leftover bean sauce in the fridge for up to 3 days and reheat until steaming hot all the way through.
