Warm the corn tortillas in a dry pan. Scatter the coriander over the steak and serve with the tortillas.

Tips

  • Slice the steak thinly across the grain. It then cooks in minutes and stays tender.
  • Do not simmer the steak for long once it is back in the sauce, or it toughens.
  • Skirt or flank steak are good alternatives, sliced thin across the grain.

Storing and freezing

Cool within 2 hours and keep in the fridge for up to 3 days. Reheat gently until steaming hot all the way through.

Questions

Can I use chicken or pork?

Yes. Use chicken thigh strips or pork loin strips and simmer for 8 to 10 minutes, until there is no pink and the juices run clear.

How do I make it more filling?

Serve over rice or with refried beans. Frijoles de la olla go especially well with the tangy sauce.

Is this dish dairy free and gluten free?

Yes. It uses no dairy, gluten, egg or nuts, as long as the sauce was made with gluten free stock and the tortillas are pure corn.
