Method
- 1
Heat the oven to 200°C (180°C fan). Season the steak strips with the cumin and 0.5 tsp salt.
- 2
Heat the oil in a large frying pan over a high heat. Fry the steak in 2 batches for 2 to 3 minutes each, until browned and cooked through. Lift out.
5 min - 3
Lower the heat, add the onion and garlic and cook for 5 minutes. Return the beef. Take off the heat.
5 min - 4
Warm the tortillas for 10 seconds each in a dry pan or microwave. Spread each with a quarter of your ready made refried beans (see the base recipe), then add the beef and a quarter of the cheese. Fold in the ends and roll up tightly.
- 5
Put the burritos seam side down in a baking dish. Pour over your ready made green enchilada sauce (see the base recipe) and scatter with the remaining cheese.
- 6
Bake for 20 minutes until the sauce is bubbling and the cheese is golden. Scatter with coriander and serve.
20 min
Tips
- Warm the tortillas so they roll without splitting.
- Cut the steak thin across the grain so it cooks quickly and stays tender.
- Roll the burritos tightly and sit them seam side down so they hold their shape.
Storing and freezing
Cool within 2 hours and keep in the fridge for up to 3 days. Freeze unsauced burritos for up to 3 months. Reheat until steaming hot all the way through.
Questions
Can I use chicken or pork instead of beef?
Yes. Chicken thigh strips or pork loin strips work well. Cook until there is no pink and the juices run clear.
Can I make these ahead?
Yes. Assemble in the dish, cover and chill for up to 24 hours. Add 5 to 10 minutes to the baking time.
Are smothered burritos spicy?
Medium. The sauce brings a gentle heat from jalapeños. Serve with sliced avocado to cool it.
