Method
- 1
Mix the chicken strips with your ready made chipotle adobo sauce (see the base recipe) and a pinch of salt. Cover and marinate in the fridge for at least 30 minutes.
30 min - 2
Heat the oil in a large frying pan over a high heat. Fry the chicken in two batches for 6 minutes each until browned and cooked through.
12 min - 3
Add the pineapple to the pan and cook for 3 minutes until lightly charred. Squeeze over the lime juice.
3 min - 4
Check the chicken is steaming hot and no pink remains when you cut a piece in half.
- 5
Warm your homemade flour tortillas (see the base recipe) in a dry pan for 15 seconds a side.
- 6
Pile the chicken and pineapple into the tortillas and top with your pickled red onions (see the base recipe), coriander and lime.
Tips
- Chicken thighs stay juicy under high heat, while breast dries out.
- Cook the chicken in batches so it browns and does not steam.
- The pickled onions cut through the smoke and sweetness. Do not skip them.
- Make it hotter with extra chipotle or a few drops of habanero salsa.
Storing and freezing
Keep the cooked chicken in the fridge for up to 3 days and reheat until steaming hot all the way through. Freeze for up to 2 months.
Questions
Can I use tinned pineapple?
Yes. Drain it very well and pat it dry before frying so it chars instead of stewing. Fresh pineapple gives better flavour.
Is this spicy?
Medium to hot. Chipotle adobo has a smoky heat. Use 50 ml instead of 80 ml for a milder taco.
Can I grill the chicken?
Yes. Skewer the marinated chicken and grill for 6 to 8 minutes on each side, until cooked through, then chop.
