Method

  1. 1

Heat the oven to 220°C (200°C fan). Cut the cauliflower into large florets, toss with the oil and salt on a baking tray and roast for 25 minutes until deep golden at the edges.

    25 min
  2. 2

Warm your ready made easy red mole (see the base recipe) in a wide pan with the water for 5 minutes until pourable.

    5 min
  3. 3

Tip the roasted cauliflower into the mole and turn it over for 3 minutes so the florets are coated and hot.

  4. 4

Warm the tortillas in a dry pan for 20 seconds a side and wrap in a clean tea towel.

  5. 5

Top the cauliflower with pumpkin seeds and coriander and serve with the tortillas and lime wedges.

Tips

  • Cut florets of similar size so they all roast at the same pace.
  • Roast until properly browned. Pale cauliflower tastes of nothing next to a dark sauce.
  • Add the mole off the heat if you want it to stay thick and sticky.

Storing and freezing

Keeps 3 days in the fridge in a covered container. Reheat until steaming hot all through. Freezing softens cauliflower a lot, so eat it fresh.

Questions

Can I roast the cauliflower whole?

Yes. Roast a whole head for about 50 minutes, then brush with warm mole and roast 10 minutes more. It looks dramatic, but florets are easier to serve.

What can I serve with it?

Rice, refried beans or a simple green salad with lime dressing. Tortillas let everyone make their own tacos.

Is it vegan and gluten free?

Yes, with the easy red mole base as written, which uses vegan chocolate and gluten free tortilla and stock.
