Method
- 1
Heat a dry frying pan over a high heat. Fry your ready made carnitas (see the base recipe) in a single layer for 4 to 5 minutes, turning once, until hot and crisp at the edges. Make sure it is steaming hot all the way through.
5 min - 2
Warm your ready made arroz rojo (see the base recipe) in a covered pan with 3 tbsp water until steaming hot. Reheat chilled rice only once.
6 min - 3
Mash the avocados with the lime juice and a pinch of salt.
- 4
Warm your ready made flour tortillas (see the base recipe) in a dry pan for 20 seconds each side until soft and pliable.
0 min 40 s - 5
Lay a tortilla flat and spread with avocado. Add rice, carnitas, lettuce, onion and coriander. Fold in the sides and roll tightly.
- 6
Heat the oil in a pan over a medium heat and toast the burritos seam side down for 2 minutes, then turn for 2 more until golden.

Tips
- Crisp the pork in a hot pan until the edges frizzle. That crunch against soft rice is the best part.
- Roll tightly and toast seam side down first so the burrito seals shut.
- Add a spoon of salsa verde inside for a tangy kick.
Storing and freezing
Eat within 1 day if kept chilled. Freeze wrapped burritos for up to 1 month and reheat once at 190C (fan 170C) for 35 minutes until steaming hot all the way through.
