Method
- 1
Heat the oven to 200°C (180°C fan). Heat the oil in a large frying pan over a high heat. Sear the steak strips with the cumin and salt for 3 minutes, until browned and cooked through, then lift out.
3 min - 2
In the same pan, cook the onion for 4 minutes until soft. Return the beef.
4 min - 3
Warm your ready made flour tortillas (see the base recipe) in a dry pan for 15 seconds on each side. Warm your ready made refried beans (see the base recipe) in a small pan until steaming hot all the way through.
- 4
Spread 2 tablespoons of beans down the middle of each tortilla, add the beef and onion, fold in the sides and roll up tightly.
- 5
Place the burritos seam side down in a baking dish. Pour your ready made red enchilada sauce (see the base recipe) over them and scatter with the cheese.
- 6
Bake for 15 minutes until the cheese is melted and the sauce is bubbling. Top with soured cream and coriander.
15 min
Tips
- Slice the steak thinly across the grain so it stays tender.
- Do not overfill. About 4 tablespoons each lets you close the burritos properly.
- Pour the sauce around the edges as well as over the top so the tortillas soften evenly.
Storing and freezing
Cool within 2 hours and refrigerate for up to 3 days. Reheat in the oven until steaming hot all the way through. Freeze unsauced burritos for up to 2 months.
Questions
What makes a burrito enchilado?
It is a burrito covered with red chilli sauce and cheese, then baked or grilled. This wet burrito style is popular in northern Mexico and Tex-Mex cooking.
Can I use mince instead of steak?
Yes. Brown 500 g beef mince with the cumin until no pink remains, then continue as in the recipe. It is cheaper and quicker.
