Method

  1. 1

Marinate the steak in your ready made carne asada marinade (see the base recipe) in the fridge for 2 to 8 hours. Throw away the used marinade.

  2. 2

Pat the steak dry and cook on a very hot griddle or frying pan for 3 minutes each side for medium. Rest for 5 minutes, then slice thinly across the grain and chop into small pieces.

  3. 3

Warm the refried beans (see the base recipe) in a pan with a splash of water until loose and hot.

  4. 4

Warm the flour tortillas (see the base recipe) one at a time in a dry pan for 20 seconds each side so they bend without cracking.

    0 min 40 s
  5. 5

Down the middle of each tortilla spread beans, then add steak, cheese, tomato, onion, avocado and coriander.

  6. 6

Fold in the sides, roll up tightly, then crisp the seam side down in the dry pan for 1 minute. Serve cut in half.

    1 min

Tips

  • Chop the steak small so it stays inside the roll and every bite has meat.
  • Do not overfill, or the tortilla splits when you roll it.
  • Brown the rolled burritos on the seam side first so they hold shut.

Storing and freezing

Wrap cooled burritos tightly and keep in the fridge for up to 3 days or freeze for up to 2 months. Reheat until steaming hot all the way through.

Questions

What makes a Sonoran burrito different?

Northern Mexico uses large, thin flour tortillas and fills them simply with grilled meat, beans and cheese, without the rice that is common in US versions.

Can I freeze these burritos?

Yes. Cool, wrap each one in foil and freeze for up to 2 months. Defrost overnight in the fridge and reheat in a hot oven until steaming hot in the middle.
