Divide between plates straight away. Top with the chicken, soured cream, queso fresco, onion, avocado and coriander.

Tips

  • Chilaquiles are best the moment they are made. Serve straight away so the chips keep some bite.
  • Use thick, sturdy chips, or fry your own from stale tortillas, for the best texture.
  • Add a fried egg on top for a hearty brunch. It will no longer be egg free.
  • If the sauce is thick, loosen it with a splash of the chicken poaching broth.

Storing and freezing

Best eaten at once. Keep leftover sauce and chicken separately in the fridge for up to 2 days. Do not store the dressed chips.

Questions

What is the difference between green and red chilaquiles?

Green chilaquiles use tomatillo sauce and taste fresh, tangy and herby. Red ones use dried chillies and are deeper and smokier.

Can I make it vegetarian?

Yes. Leave out the chicken and use beans, spinach or a fried egg. The green sauce is vegan.

Are shop bought chips OK?

Plain corn chips work well if they are thick. Avoid flavoured chips, which can taste odd and may contain gluten.

Is it dairy free?

Leave out the soured cream and queso fresco and add more avocado for a dairy free plate.
