Method

  1. 1

Drain the tuna very well and flake it into a bowl. Add the juice of 1 lime, the red onion, half the coriander and a pinch of salt. Mix gently.

  2. 2

Mash the avocados in a second bowl with the juice of the other lime and the rest of the salt. It should be creamy with a few lumps.

  3. 3

Check your ready made tostadas (see the base recipe) are crisp. If they have softened, warm them in a hot oven for 3 minutes.

  4. 4

Spread a layer of avocado on each tostada, right to the edges, so the topping sticks.

  5. 5

Top with the shredded lettuce, then a heap of tuna.

  6. 6

Finish with a spoonful of your ready made escabeche (see the base recipe) on each, a splash of its liquid and the remaining coriander. Eat straight away, with two hands.

Tips

  • Drain the tuna really well and pat it dry, or the tostadas go soft before you reach the table.
  • Build the tostadas just before eating. They stay crisp for only about 10 minutes once topped.
  • Chop a few slices of the escabeche jalapeño finely and mix into the tuna for extra heat.

Storing and freezing

Best eaten straight away. Keep the tuna mix in the fridge for up to 1 day and assemble fresh tostadas when needed.

Questions

Is this good as a starter?

Yes. Serve one tostada each as a starter for 8, or two each as a light lunch. It takes about 15 minutes with the base recipes ready.

Can I use fresh fish?

Yes. Cooked flaked salmon or cold poached white fish works well. Make sure it is chilled and fully cooked before you assemble the tostadas.
