Method

  1. 1

Put the mango, red onion, coriander, lime juice and salt in a bowl and stir. Leave for 5 minutes so the onion softens slightly.

  2. 2

Warm the black beans from your base recipe in a small pan over a low heat with a splash of water until steaming hot, mashing a few with a spoon to thicken.

  3. 3

Take the tostadas from your base recipe. If they have gone soft, crisp them in the oven at 180°C (160°C fan) for 5 minutes.

  4. 4

Spread each tostada with a spoonful of warm black beans. Add shredded lettuce, then the mango mix and the diced avocado.

  5. 5

Drizzle with a small amount of your ready made habanero salsa (see the base recipe). Taste one first, as it is very hot. Serve at once, before the tostadas soften.

Tips

  • Use a mango that gives slightly when pressed. Hard mango is sour and soft mango turns mushy.
  • Assemble just before eating, as tostadas soften within minutes under wet toppings.
  • Stir a little habanero salsa into the mango mix instead of drizzling if you want the heat spread evenly.

Storing and freezing

Keep the mango mix and beans separately in the fridge for up to 2 days. Do not assemble ahead. Reheat beans until steaming hot.

Questions

Can I use tinned mango?

Fresh or frozen thawed mango is better. Tinned mango in syrup is too sweet and soft for this dish; drain it very well if it is all you have.

How hot is it?

The beans and mango are mild. The heat depends on how much habanero salsa you add, so start with a few drops per tostada.

Can I serve it as a starter?

Yes. Use mini tostadas or chips and spoon the toppings on, giving 2 to 3 per person. It also works as a party nibble.
