Method
- 1
Bring a pan of salted water to a gentle boil. Add the prawns and cook for 2 to 3 minutes until pink and curled all the way through. Drain and cool in iced water for 2 minutes.
2 min 30 s - 2
Drain and pat the prawns dry. Chop into bite sized pieces.
- 3
In a bowl mix the prawns, lime juice, cucumber, coriander, salt and chilli. Chill for 10 minutes.
- 4
Add a small spoon of your ready made creamy avocado salsa (see the base recipe) to each tostada from your base recipe. Pile on the prawn mix.
- 5
Top with pickled red onions (see the base recipe) and serve straight away, before the tostadas soften.
Tips
- Cool the cooked prawns quickly in iced water, so they stay springy rather than rubbery.
- Drain the prawns well, or the tostadas go soggy fast.
- Use cooked cold water prawns if short of time, but add the lime just before serving.
Storing and freezing
Eat within 2 hours of assembling. Keep the dressed prawn mix covered in the fridge for up to 1 day. Do not assemble ahead.
Questions
Can I use pre-cooked prawns?
Yes. Use 400 g cooked peeled prawns, chopped, and skip the cooking. Check they are fully thawed and use by the date.
Is this spicy?
Mildly. The chilli can be left out. Add more or hot sauce if you want heat.
Can I make it ahead for a party?
Prepare the prawn mix and salsa separately up to a few hours ahead and assemble just before serving, so the tostadas stay crisp.
