  2. 2

Toast the pumpkin seeds in a dry pan for 2 minutes until they pop.

    2 min
  3. 3

Arrange the lettuce, cucumber, radish, tomato and onion on four plates or a large platter.

  4. 4

Top with warm carnitas and scatter with the pumpkin seeds.

  5. 5

Thin the creamy avocado salsa (see the base recipe) with a splash of water so it can be drizzled, spoon it over and serve with lime wedges.

Tips

  • Serve the pork warm so it contrasts with the cold leaves.
  • Salt the tomatoes lightly and leave for 5 minutes to draw out flavour.
  • Thin the avocado salsa to a drizzle with a little cold water.

Storing and freezing

Best eaten immediately. Keep the dressing covered with cling film pressed on its surface in the fridge for 1 day.

Questions

Can I use another meat?

Yes. Shredded chicken or turkey works, but the base is designed around pork carnitas.

Is it dairy free?

Yes, the avocado salsa is dairy free in the base recipe, as long as you do not add cheese.

Can I add beans?

Yes. A handful of black beans make it more filling, though it will no longer be low in carbohydrate.
