  2. 2

Coat each chicken piece in flour, then egg, then breadcrumbs, pressing well.

  4. 4

Toast the cut sides of the rolls in a dry pan for 1 minute.

  5. 5

Spread the bottom of each roll with warm refried beans from your base recipe. Add a piece of chicken, tomato, lettuce and escabeche from your base recipe.

  6. 6

Spread the top of each roll with your ready made creamy avocado salsa (see the base recipe), close and press gently. Serve at once.

Tips

  • Flatten the chicken evenly so it cooks through before the crumb burns.
  • Keep the oil at a steady medium heat. If the crumb browns in under 3 minutes, turn it down.
  • A bolillo roll is traditional. Soft ciabatta rolls are the closest in the UK.

Storing and freezing

Eat fresh. Keep any cooked chicken in the fridge for up to 2 days and reheat in a {t200} oven for 12 minutes until steaming hot all the way through to keep the crumb crisp.

Questions

Can I bake the chicken?

Yes. Spray the breaded chicken with oil and bake at {t220} for 20 to 25 minutes, turning once, until golden and cooked through. It will be a little less crisp.

Can I use pork or beef?

Yes. Thin pork loin steaks or beef escalopes work well as milanesa. Flatten them to 5 mm and fry for 2 to 3 minutes each side.

Can I make it gluten free?

Yes. Use gluten free flour, gluten free breadcrumbs and gluten free rolls. Check each label.
