Method

  1. 1

Rinse the rice in a sieve under cold water until the water runs clear. Drain well.

  2. 2

Heat the oil in a large pan with a lid over a medium heat. Fry the rice for 3 minutes, stirring, until it smells nutty and turns opaque. Add the onion and carrot and cook for 4 minutes.

  3. 3

Stir in your ready made guajillo adobo paste (see the base recipe) and the tomatoes and cook for 3 minutes.

  5. 5

Lay the prawns and peas on top of the rice, cover again and cook for 5 minutes more, until the prawns are pink and cooked through and the rice has absorbed the liquid.

  6. 6

Take off the heat and rest, covered, for 5 minutes. Fluff with a fork.

  7. 7

Scatter over the coriander and your ready made pickled red onions (see the base recipe) and serve with lime wedges.

Tips

  • Fry the rice in oil first. It keeps the grains separate and stops them going gluey.
  • Do not lift the lid while the rice cooks. The steam does the work.
  • Eat the rice straight away or cool it within 1 hour. Rice should never sit warm for long.

Storing and freezing

Cool quickly, within 1 hour, spread out on a tray. Keep in the fridge for up to 1 day. Reheat only once, until steaming hot all the way through.

Questions

Can I use brown rice?

Yes. Add 150 ml extra stock and cook for about 25 minutes before adding the prawns. Check the grains are tender.

Can I use fish or chicken instead?

Yes. Use chunks of firm white fish added at the same time as the prawns, or diced chicken browned first and cooked through.

Is the dish gluten free?

Yes. It has no gluten, dairy, egg or nuts, provided the stock cube is gluten free.
