Method
- 1
Heat the oven to 200°C (180°C fan). Brush both sides of each corn tortilla (see the base recipe) with 1 tbsp of the oil, lay on baking trays and bake for 8 to 10 minutes, turning once, until crisp and golden.
9 min - 2
Mix the chipotle adobo sauce (see the base recipe) with the lime juice and 1 tbsp water to make a drizzle.
- 3
Pat the tuna dry and season with salt. Heat a heavy frying pan over a very high heat until smoking. Add the remaining oil and sear the tuna for 1 to 2 minutes a side for a pink centre, or 3 minutes a side for fully cooked.
3 min - 4
Rest the tuna for 2 minutes, then slice thinly across the grain.
2 min - 5
Spread each tostada with guacamole (see the base recipe). Top with cucumber and tuna slices.
- 6
Drizzle with the chipotle sauce and scatter with spring onions and sesame seeds. Eat straight away.
Tips
- The pan must be extremely hot for a good sear. Dry the tuna well first.
- For anyone pregnant, elderly or with a weak immune system, cook the tuna all the way through.
- Bake the tostadas ahead and keep in an airtight tin for 2 days.
- Assemble just before eating so the tostadas stay crisp.
Storing and freezing
Best eaten fresh. Keep the seared tuna in the fridge for no more than 1 day and eat it cold. Tostadas keep for 2 days in an airtight tin.
Questions
Is seared tuna safe?
Fresh tuna is commonly eaten pink in the middle, but cook it through for pregnant women, young children, older people or anyone with a weak immune system.
Can I use tinned tuna?
Yes. Mix 2 drained tins with the chipotle sauce, lime and spring onion and spoon onto the tostadas. It is a classic Mexican tostada topping.
Are these tostadas gluten free and dairy free?
Yes. Tuna, guacamole, chipotle and masa harina tortillas contain no gluten, dairy or egg. Sesame is an allergen, so leave it off if needed.
