Method

  1. 1

Use your ready made salsa a la diabla (see the base recipe). Warm it in a small pan over a low heat until steaming.

  2. 2

Heat the oil in a large frying pan over a high heat. Add the prawns and garlic and cook for 2 minutes, turning once, until the prawns are starting to turn pink.

    2 min
  3. 3

Pour the diabla sauce over the prawns and simmer for 2 minutes until the prawns are pink, curled and opaque all the way through and the sauce coats them.

    2 min
  4. 4

Warm your ready made corn tortillas (see the base recipe) in a dry pan for 20 to 30 seconds a side.

  5. 5

Fill each tortilla with prawns and sauce. Top with avocado, pickled red onions and coriander, and serve with lime wedges.

Tips

  • Simmer the prawns in the sauce for no longer than 2 minutes, as they turn tough quickly.
  • Diabla is hot. Serve extra avocado, crema or a squeeze of lime to cool the heat.
  • Pat prawns dry before frying so they sizzle instead of steam.
  • Spoon any leftover sauce over rice the next day.

Storing and freezing

Best eaten fresh. Keeps in the fridge for up to 1 day. Cool within 1 to 2 hours and reheat quickly until steaming hot all the way through, once only. Do not freeze cooked prawns.

Questions

How hot is salsa a la diabla?

It is properly hot, thanks to chiles de arbol. Use less sauce, or serve with plenty of avocado and a dairy free yoghurt to cool it.

Can I use chicken instead?

Yes. Cook diced chicken thigh in the pan for 6 to 8 minutes until no pink remains, then simmer in the sauce.

Are these tacos gluten free and dairy free?

Yes. Prawns, diabla sauce, avocado and masa harina tortillas contain no gluten, dairy, egg or nuts. Prawns are a shellfish allergen.
