Method
- 1
Put the chicken in a bowl or bag with your ready made pollo asado marinade (see the base recipe). Turn to coat and marinate in the fridge for at least 2 hours and up to 8 hours.
120 min - 2
Heat a griddle pan or barbecue until very hot, or heat the oven to 220°C (200°C fan) for the grill. Do not use the used marinade as a sauce.
- 3
Lift the chicken out and shake off most of the marinade. Grill for 6 to 7 minutes on each side, until charred in places and cooked through, with no pink and clear juices.
13 min - 4
Toss the spring onions in the oil and grill for 3 minutes, turning, until lightly charred.
- 5
While the chicken rests for 5 minutes, heat your ready made cilantro lime rice (see the base recipe) in a covered pan with 3 tbsp water until steaming hot all the way through.
5 min - 6
Serve the chicken on the rice with the spring onions, a generous spoonful of your ready made guacamole (see the base recipe), radishes and lime wedges.
Tips
- Thighs stay juicy on a hot grill. If you use breasts, flatten them to an even 2 cm thickness so they cook at the same rate.
- Throw away the raw chicken marinade. If you want a sauce, serve extra lime and guacamole instead.
- Marinate for no longer than 8 hours. The citrus acid makes the meat go soft and a bit mushy.
Storing and freezing
Cool leftover chicken within 1 hour and keep in the fridge for up to 2 days. Eat guacamole the same day. Reheat chicken and rice only once until steaming hot all the way through.
Questions
Can I cook this in the oven?
Yes. Roast the marinated thighs on a tray at 220 degrees C for 25 to 30 minutes, turning once, until cooked through and browned at the edges.
What does achiote taste like?
Achiote has a mild, earthy, slightly peppery flavour and gives food a deep orange colour. It is used in the marinade for the signature colour and taste of pollo asado.
Can I add the guacamole to the rice?
Yes. Serve it on top or beside the rice so the avocado stays fresh and green.
