Coat the pork in your ready made al pastor marinade (see the base recipe). Cover and chill for at least 4 hours.

  2. 2

  5. 5

Put 2 tbsp of filling in a line across the bottom third of each tortilla, roll up tightly, and place seam side down on the tray. Brush all over with the remaining oil.

  6. 6

Bake for 15 to 18 minutes, turning once, until crisp and golden. Serve with guacamole, cabbage, radish and lime wedges.

Tips

  • Warm tortillas bend without tearing. Cold ones crack as you roll.
  • Roll tightly and keep the seam side down while baking so they stay closed.
  • Brush each flauta lightly with oil so they crisp evenly.
  • For fried flautas, shallow fry in hot oil for 2 minutes per side.

Storing and freezing

Keeps in the fridge for up to 3 days, cooled within 1 to 2 hours. Freeze unbaked for up to 2 months and bake from frozen. Reheat in a hot oven until steaming hot all the way through.

Questions

What is the difference between a flauta and a taquito?

Flautas are usually rolled from larger tortillas and are longer. Taquitos are smaller. They are often used for the same thing.

Can I fry instead of bake?

Yes. Shallow fry in 1 cm of hot vegetable oil for 2 minutes per side until golden, then drain on kitchen paper.

Is it gluten free and dairy free?

Yes. Pork, corn tortillas, guacamole and vegetables contain no gluten, dairy, egg or nuts.
