Method

  1. 1

Flake the drained tuna into a bowl. Add the red onion, tomato, coriander and lime juice, season with salt and mix lightly with a fork.

  2. 2

Taste and add more lime or salt. The tuna should taste fresh and bright, not heavy.

  3. 3

Spread a layer of your ready made guacamole (see the base recipe) over each tostada, right to the edges, so it seals the surface and keeps the tostada crisp.

  4. 4

Pile the tuna mixture on top.

  5. 5

Spoon over your ready made salsa roja (see the base recipe), using about 1 tbsp per tostada.

  6. 6

Serve straight away, two tostadas per person, as the base softens within about 10 minutes.

Tips

  • Drain the tuna very well and pat it dry. Excess water is the quickest way to a soggy tostada.
  • Assemble just before eating. Keep each part cold and the tostadas dry until the last minute.
  • Tinned tuna in olive oil gives a richer taste. Drain it well and cut back on the guacamole if you use it.

Storing and freezing

Eat straight away. The tuna mixture keeps for 1 day in the fridge in a covered container, but the assembled tostadas do not store.

Questions

Can I use fresh tuna?

Yes. Sear a tuna steak for 1 minute each side, rest it and dice it small, then dress it with lime and onion. Only use fish sold as suitable to eat rare.

Can I make it ahead for a party?

Prepare the tuna mix and guacamole up to 4 hours ahead, covered in the fridge. Assemble on the tostadas at the last minute.

What can I use instead of tuna?

Cooked prawns, shredded poached chicken or mashed black beans all work. Dress them in lime and salt in the same way.
