Method

  1. 1

Flake the drained tuna into a bowl with a fork.

  2. 2

Stir in your ready made chipotle adobo sauce (see the base recipe), the mayonnaise, half the lime juice and the salt until creamy. Taste and add more chipotle for heat.

  3. 3

Toss the tomatoes with the remaining lime juice and a pinch of salt in a separate bowl.

  4. 4

If your ready made tostadas (see the base recipe) have gone soft, crisp them in a dry pan or a hot oven for 2 minutes.

  5. 5

Spread each tostada with tuna, then top with tomato, avocado slices, your ready made cebollas encurtidas (see the base recipe) and coriander.

  6. 6

Serve straight away so the tostadas stay crisp.

Tips

  • Drain the tuna well, pressing it with a fork against a sieve. Wet tuna makes the tostadas soggy within minutes.
  • Assemble at the table. A tostada gets soft after about 5 minutes under topping.
  • Use chunk tuna in spring water for the best texture. Tuna in oil will also work, but drain it thoroughly.

Storing and freezing

Eat straight away. The tuna mixture keeps covered in the fridge for up to 24 hours, kept apart from the tostadas.

Questions

Can I use fresh tuna?

Yes. Sear 300 g of tuna steak for 1 minute each side, rest, slice and dice it, and use it in place of the tinned tuna.

Can I use crab or prawns instead?

Yes. Cooked prawns or white crab meat work with the same chipotle mix.

Can I use shop bought tostadas?

Yes. Check the label for 100% corn to keep the dish gluten free.
