Method
- 1
Toss the steak pieces with the fajita seasoning mix (see the base recipe) and the oil in a bowl.
- 2
Heat a large frying pan over a high heat. Fry the bacon for 5 minutes until the fat has rendered and the pieces are crisp. Lift out and set aside, leaving the fat in the pan.
5 min - 3
Fry the steak in 2 batches in the bacon fat for 2 to 3 minutes a batch until browned. Lift out.
4 min - 4
Add the pepper and onion to the pan and cook for 5 minutes until softened and lightly charred.
5 min - 5
Return the steak and bacon, stir for 1 minute until hot, then scatter over the cheese and cover with a lid for 1 to 2 minutes until it melts.
- 6
Warm your ready made corn tortillas (see the base recipe) in a dry pan. Spoon the alambre onto the tortillas, spoon over salsa taquera and serve with lime wedges.
Tips
- Cut the steak small so it cooks fast and each bite includes bacon, pepper and cheese.
- Use the bacon fat to cook the beef, as it carries the smoky flavour through the dish.
- Choose bacon that states it is gluten free if you are cooking for someone with coeliac disease.
- Cover the pan with a lid to melt the cheese, or put it under a hot grill.
Storing and freezing
Keeps in the fridge for up to 2 days. Cool within 1 to 2 hours and reheat in a hot pan until steaming hot all the way through.
Questions
Why is it called alambre?
Alambre means wire in Spanish and refers to the metal skewer on which the meats were grilled. Today it is a mix of beef, bacon, peppers and cheese on a plate or in tacos.
Can I make it with chicken?
Yes. Use thin strips of chicken thigh, cook them through for 5 to 6 minutes and keep the bacon and cheese.
Are these tacos gluten free?
Yes, when you choose gluten free bacon and check the seasoning labels. They are not dairy free because of the cheese.
